Our Story
Rooted in a family legacy spanning over 40 years of coffee production in Panama, Arauz family originally focused on commercial coffee across roughly 200 hectares in Río Sereno. The move into specialty coffee began at their farm in Cotito, located near Black Mountain in the Volcán region at elevations between 1,350 and 1,500 masl. At the highest point of the farm, 3 hectares of Geisha and a section of Chiroso were planted in 2020 by the Richard Arauz’s father. Following his father passing in 2021, Richard stepped forward to honor his vision and fully commit to the specialty coffee world—a transition that has brought exceptional processing success and strong international demand.
Building upon this initial success, Richard is expanding into new high-altitude terroirs across Panama. This includes reinvesting in a four-hectare farm in Las Nubes, Cerro Punta, planted with Geisha. Chevas has also joined on this project, becoming partners by combining the Cerro Punta farm with Nova so that Nova and the Cerro Punta farm will be developed together as a shared project. Additionally, Richard recently acquired an established farm in El Salto, Boquete—located directly across from Chevas’ farm—featuring mature, producing Caturra, Catuai, and Typica trees. Together, these distinct sites form a growing foundation for producing high-quality varietal coffees.
ABOUT THE PROCESS:
For this specific Geisha lot from the Cotito farm at 1,500 masl, only the ripest red cherries were selected at harvest. The coffee was placed in a tank inside a cold room for an initial 48 hours of fermentation, followed by another 5 to 6 days in the cold room at a controlled temperature between 14°C and 16°C. Finally, the lot was transferred to a dark room for a slow, dehumidified drying phase lasting approximately 18 to 20 days to carefully stabilize the coffee and lock in its final flavour profile.
