Our Story
The return of a producer that we love. We have had several lots from Basha Bekele and they have always impressed us. However, we were a bit surprised when we had our first test roast as it was not quite a vibrant as we remember and expect this coffee to be. Rather than leaving it as is, we decided to implemented a specialised pre-roast rehydration protocol inspired by Christopher Feran’s blog (it’s a lengthy and technical read) on restoring vibrancy to green coffee. By targeting a 5% by weight hydration increase prior to roasting, we aim to "reset" the water activity within the seeds. This process allows for more uniform heat transfer and preserves the delicate volatile aromatics that can sometimes diminish during transit. The result is a cup with intensified clarity and a remarkably refreshed acid profile.
