It has returned!
Named after Diego's eldest daughter Luna, The process begins with harvesting overripe coffee cherries, which, due to their extended contact with the beans, absorb more fruity flavors from the pulp.
The cherries then undergo a short fermentation of about 12 hours before being depulped. After depulping, a liquid pulp extract is added, and the beans continue fermenting in this liquid environment for an additional 48 hours.
Finally, the coffee is dried using a dehumidifier to carefully remove moisture. This helps preserve its delicate flavor notes, prevents over-oxidation of the beans, and halts metabolic activity to avoid over-fermentation.
