From Crop to Cup:
“David Flores farms at 1850–1900 masl and serves as the legal representative and General Manager of El Morito—a role that reflects his leadership within a network of over 150 producers. Starting young, David pursued coffee with curiosity and resolve. His lots at La Neblina—typically Sydra, Geisha, and Marshell—are processed on-farm with an eye toward continual improvement. For David, the journey is ongoing, and recognition is less a milestone than a motivation. Under David’s leadership, El Morito brings together independent growers under a structure that emphasizes autonomy in processing and shared success in export.”
Sydra (often spelled Sidra) is an elite specialty coffee cultivar renowned for its complex, tea-like elegance and vibrant sweetness.Genetic testing by institutions like World Coffee Research (WCR) revealed that many plants cultivated as "Sydra/Sidra" display strong genetic markers linked directly to Ethiopian heirloom/landrace varieties.
This coffee is processed in multi-stages to highlight the Sydra varietal’s full potential, beginning with hand-selecting peak-ripe cherries and floating them in water to remove any floaters or defects. The intact cherries first undergo a 36-hour anaerobic (oxygen-free) fermentation in sealed containers called timbos to encourage early flavor development, after which they are pulped and subjected to a 72-hour shaded, open-air fermentation to enhance sweetness and structure. Finally, the coffee is dried slowly over more than 30 days in multi-tiered solar greenhouses, a gentle method that protects its delicate floral aromatics while building rich depth and complexity in the cup.
