From POMA:
“This Pink Bourbon varietal comes from Finca Las Brisas, a high-altitude farm in Pitalito, Huila, managed by third-generation producer Brayan Smith. We have worked with some of Brayans microlots through Cofinet, working on general improvement of nutrition, crop load, and shading practices. This specific lot underwent a washed process: cherries were floated and sorted, then fermented underwater for 30 hours before depulping. After fermentation, the coffee was fully washed and dried under controlled conditions, enhancing clarity and preserving the variety’s floral and red fruit characteristics”
